Mengxing went to high school and college in Zhengzhou, China, where he received his Bachelor's degree in Food Engineering. He also received a Master's degree in Biosystems Engineering in Oklahoma. While at UNL, Mengxing received a PhD in Biological Engineering as well as a Master's in statistics. His vision is to use statistics and math modeling to boost research in fermentation process design. He enjoys backpacking, hiking, and fishing during his free time.
